Dulce de leche Chocolate babycakes


I had a can of dulce de leche in the pantry - been sitting there for about two weeks. I didn't want to make brownies again, and i had been wanting to make these babycakes from 'epicure chocolate' for a while, so i whipped these up on a Monday morning (yes, i sometimes do my baking in the mornings before work, then i get awesome morning natural lighting for my photo's hehe).

But these weren't or me, they were for the uber cool Bensy - i had missed his birthday on the weekend because i was in Melbourne, so i wanted to make it up to him :)

Ingredients

1 cup cold water
1 cup sugar
125 g butter
2 generous tbsp cocoa
3/4 tsp bi-carb soda
2 eggs, beaten
1.5 cups self raising flour

Preheat oven to 180C.

Combine water, sugar, butter, cocoa & soda in a large saucepan.

Bring to the boil slowly. Simmer for 5 minutes & cool.

Add eggs and sifted flour and mix well.

Place mixture in mini muffin trays.

Add a blob of dulce de leche into the centres of each muffin.

Cook for 10-15 minutes, or until tops spring back when pressed gentley and a toothpick inserted in the centre comes out clean.

Cool slightly, best eaten warm, or zapped in the microwave if its cold!

Because i had left over dulce de leche, Bensy got the rest of this liquid gold caramel to pig out on hehe. HAPPY BDAY DUDE!

Chocolate cake is good, and dulce de leche makes it even better! I do my baking in the late afternoon, which means it's pitch dark when I want to take photos. I'm barely awake in the mornings ;)

I've never made Dulce de leche, but you make it look so easy and so good. I think I should definitely jump on the bandwagon and give it a go.
