Happy Halloween everyone!
I don't usually celebrate, so this was a chance to make something halloween-ish :)

70 g butter
280 g plain flour
6 tbsp cocoa powder
3 tsp baking powder
85 g caster sugar
1 egg beaten
300ml milk
100g milk choc chips
55 g mini white marshmallows
Orange Icing
250g butter, cubed, at room temperature
450g (3 cups) pure icing sugar, sifted
60ml (1/4 cup) milk
1 tsp vanilla essense
red food coloring, yellow food colouring (to make orange!)

Method
preheat oven to 190C
melt butter
sift flour cocoa powder and baking powder in a large bowl. stir in sugar.
whisk egg, milk & melted butter together, and gentley stir into the flour mixturee to form a stiff batter.
Gently stir through choc chips and marshmallows.
Spoon into muffin cases, and bake for 20-25 minutes until well risen. leave to cool in tin for 5 mins, and cool completley before icing.
With the icing i just beat everything together, and added the food coloring - until i got the right colour.
I Baked these for about 23 mins, they were slightly dry! So i'd say bake for 18-20 minutes instead :)
oops! almost forgot!
the decoration, i just bought a tube of white fudge icing from woolworths, drew four circles starting from small in the middle. then using a toothpick, start from the centre & work your way out, to make it look like a cobweb :)

Oh nice! I wanted to bake muffins or cupcakes for halloween, but I don't think I'll have time. Might do something else ;)

Do the marshmallows make the muffins taste different to normal muffins?
